Look At Me, I’m a Chef

Monday was a very emotionally difficult day at work, so thankfully we had some sort of healthy comfort food planned for dinner. On the menu was baked Chicken Parmesan with pasta and a caprese salad. I’m super into caprese salads these days. Blame my love of tomatoes.

This is a really quick, super easy, and low clean up dinner. All of these things are very important to me in my own cooking. Easy, quick, little to no clean up.

For two servings, you’ll need pasta of your choice (I always like to do a bed of spaghetti), one large chicken breast, butterflied and pounded flat then cut into two pieces, breadcrumbs, an egg, marinara sauce and Parmesan cheese.

First things first, if you haven’t butterflied and pounded your chicken breast you should do that. Also, put on a pot of water for your pasta and pre-heat your oven to 350 degrees.

Dredge the chicken breasts through the egg and then the bread crumbs, place in a shallow glass baking dish (get real fancy and line the pan with tin foil and you’ll have less clean up :) .  Cover the chicken with some marinara sauce and cook covered for about 10 minutes.  Remove the cover, toss on some cheese and cook until chicken is cooked through and cheese is melted.

Serve the chicken on a bed of pasta. To make the pasta a little more exciting, I put mix in about a tablespoon of butter, some lemon juice and a bit of salt and olive oil.

The caprese is just sliced fresh mozzarella, sliced tomato, fresh chopped basil, a little salt and pepper, olive oil and balsamic vinegar.  Fresh, easy, delicious.

Last Sunday Brunch

Last Sunday, Travis and I headed out with some friends to a tasting brunch at the Bluebird Cafe in Culver City.  For $10 you got unlimited food and beverages were $3 each for beer, wine, and sangria.  It was a great deal, and the weather was perfect.  There was plenty of shaded seating on the patio and lots of tasty eats.

The sangria wasn’t super traditional, but was nice and refreshing, and they served them in the cute ball jars.  They also had adorable paper straws.

Chips and queso galore! The queso was delicious, it was tangy, and creamy and probably my favorite of all the food we ate.  I ate several servings of this cheesy goodness.

Breakfast tacos, eggs, bacon and cheese. The fresh tortillas really made this special.

Frito pie!  This was fritos, with beef, lettuce, tomato sour cream and a jalepeno in a frito bag.  Clever and tasty.

They also had a game set up that some peopled called sandbags, and others called cornhole.  Either way, I did not play as hand-eye coordination is not my strong suit ;)

After we’d been there for a couple hours, Kate and I skipped over to Century City to see CAPTAIN AMERICA.  I am not a comic book person, but I had a lot of fun at the movie.  Sure, I have some questions, sure it was a little long, but it was fun to watch. The special effects and the hair and makeup were excellent. I also may or may not have have shouted “Oh Hai!” when the teaser trailer for the new Spiderman movie came on.  I can’t help it, I love me some Andrew Garfield.

While it was a great and fun Sunday, the food and then popcorn for dinner made my stomach feel kinda gross.  It was worth it. ;)

Sushi 101

Last year, for his birthday, I bought Travis and me gift certificates to a Beginning Sushi making class. With all the traveling he did for work in the last year we weren’t able to schedule our class until this Saturday.  So, with our aprons in hand, we went to our Basic One Day Sushi class at the California Sushi Academy, which is located in the restaurant, Bar Hayama.  This restaurant is about two blocks from my office, which was really amusing to me.

When we arrived, we had to fill out a wavier, and then were set up at our stations along both sides of the sushi bar.

We learned how to make cucumber roll, avocado roll, California roll, Rainbow roll and then a spicy tuna hand roll.

I couldn’t even manage to cut the correct amount of rolls.  Oops?

Our Sensi was great though, and came around to everyone and assisted when necessary, without taking over anyone’s sushi, and kept us entertained the entire class.

As I expected, Travis did really well with all the sushi skills.  I, however, you know, didn’t, but I had a lot of fun and all of our sushi was delicious regardless of what it looked like.

This was a great class, and someone may or may not be getting the second class as a birthday gift this year…. Shhh don’t tell Travis. ;)

After sushi we came home and napped/read then did laundry.  For dinner we ate our leftover sushi from the class and are now watching DESPICABLE ME (which was one of my favorite movies last year) on OnDemand.  Tomorrow we have a Taste of Texas all-you-can-eat festival downtown that we’ll be attending.  This should be amazing.

Lomax!

Yesterday was a Downtown Los Angeles adventure.  We started at The Downtown Independent Theater which was holding one if its monthly Drink-Along & Beer Pong event. Yesterday’s films were Weekend at Bernie’s and Weekend at Bernie’s Two.  I had never seen either of the films.  Tickets were only $10 and included a free beer and coozy.

We all arrived around 3pm and had our free beers, then went to the roof where we played a round of beer pong.

After beer pong, we got snacks and headed into the theater, where we were given a list of rules for a drinking game.  It was hilarious. Anytime someone in the movie said “Lomax,” we shouted “LOMAX!” and took a drink, most of us from soda or water. There were several other times to drink. This lead to general hilarity during the movie.  After the first movie we went back to the roof for a bit, and then went back to watch part of the second movie.

 

 

We left around 20 minutes in because the second movie is kind of terrible, and we were all hungry.  We walked from the theater to Mac and Cheeza, a restaurant that serves only Mac and cheese. I’m kinda sad this place is only downtown because it was amazing.

 

I ordered a Baby Mac with regular noodles, cheese base, with spinach, tomato and ham, and a cheesy topping.

And a cream soda, which was also delicious.  It’s been a while since I’d had cream soda, I forget how tasty it is!

My only complaint is that the mac and cheese could have been a bit more flavorful, but it was really tasty, and a great concept.

Walked back to our cars, headed home and then today I had lunch with some friends at a place called Nichols in the Marina.  I didn’t take any pictures, but I had a delicious Avocado Melt which had avocado, tomato and Monterey jack cheese on sourdough bread.  It was really, really good. It hit the spot for sure.   After lunch I went to a friend’s house to meet her new kitten, Oscar.

On my way home from The Marina I stopped at the grocery store for some fresh fruit for the week, and some popsicles, which have been totally sold out in every grocery store I’ve stopped at in the past few weeks.  It’s been a lot cooler the last few days, but still really warm here in Los Angeles, so some icy popsicles are just what I need to keep cool. :)   Now, I’m sitting on the couch, icing my knee, which is sore from all the walking we did yesterday, and watching Harry Potter, which is being showing on what appears to be an infinite loop on ABC Family this weekend.  I am not complaining at all.  I love me some Harry Potter.  What did you do this weekend?

 

 

 

Curing Cancer

Every Mother’s Day weekend, for the past 18 years, the Revlon Women’s 5k Run & Walk has taken over downtown LA.  Two years ago was my first walk, and even though I missed last year, I was ready for this year.  I was ready because I really wanted to actually run the 5k.  Yes, my knees have been really painful, and clearly running a 5k doesn’t fall into the “rest” category, but I figured, “What’s 3.1 miles?!”

Here’s part of our team pre-walk/run.  Our motto is “Fuck Cancer,” which is appropriate.  My shirt is an old team shirt from two years ago that says “Life Every Day” which is also appropriate.  This was the first year the three of us (Janna, Dylan and myself) were running this so we weren’t sure where to go, or what to do.  We tried to make our way to the start line by 8:45am since that’s when, according to the timeline given to us from the EIF people, the run portion would start.

Clearly this was not well organized as it seemed that anyone and everyone (mostly walkers and people with strollers) were lined up at the starting line.  Halle Berry was one of the celebs at the starting line, and so people were stopping, and holding up traffic in order to take pictures of her with their cell phone cameras while she awkwardly danced and waved.  We spent almost the entire three miles bobbing and weaving around people who were walking, jogging then stopping in the middle of the road, or walking, and stopping in the middle of the road to take pictures of themselves.  This was probably the most disorganized run event I’ve ever seen.  It was complete madness, and while I applaud their effort at keeping everyone hydrated, I don’t think a water station at each mile was really necessary.  I was a little disappointed with the experience as far as running goes.  I know it’s a great cause, and this organization does some great work, but wow. What a mess.

Janna and I finished the run in about 40 minutes, which isn’t too shabby considering all the navigating through hordes of people we had to do, and how painful both our knees were feeling.


When we finished, got our medals and snack bags, we looped around nearly the whole course again to find our team of walkers.  We finished the walk with them, and after taking our team picture, our little group got some Chick-fil-a for lunch.

When I got home, I did five minutes on each of my IT Bands with my foam roller and then iced my knees for 20 minutes.  They’re still sore, and not at all pleased that I decided to completely ignore my “rest plan, but I think they’ll be ok. I hope?

My plans for the rest of the day include, bathing the kittehs, mopping the half bath where Peanut decided to pee on the floor in front of the litter box, napping, reading, and tackling TCRG studying:

Why “Cutting Back,” Isn’t the Same as “Rest”

I wrote a while ago that I’d been having knee pain, and that I was pretty certain said knee pain was Runner’s Knee.  I emailed my doctor and she advised me to “rest,” ice, stretch and do strength training.  I was pretty good about the ice, and a little better about the stretch, and I’ve been doing more strength training, but the one thing I didn’t really follow, and seemingly have never really followed properly, was “REST.” Here’s the thing, I’m not really all that great at doing what I’m told.  Especially when I’m told something I don’t like. I am highly stubborn, but I try to be friendly about it. So, I will smile, and nod and tell the doctor,  “Yes, I understand, ok, rest….yes, yes, rest.”  But, in my head I will think “So….rest? Yeah, that doesn’t actually mean NO running….it just means less running!”

See, in my mind, “rest” could mean simply “cutting back!”  So, I wouldn’t run during the week, but I’d still attempt my long run on the weekends (I know, clearly I’m an idiot.) But, the knee pain wasn’t going away, and with last week’s acceptance into the Nike Women’s Marathon (yes, Marathon as in 26.2 miles,) in San Francisco this October, I realized I needed, to but it bluntly, not fuck around.  I’m just bein real real folks. I want to be fully healthy and ready to make those 26.2 miles my bitch.

So, as of right now, I am working on the rest part. For example, today, I did some strength training and elliptical because it doesn’t bother my knee.  Then, I came home, did some push ups and ate ice cream.  I don’t know what’s going on, but I have been a sweet tooth monster lately, and I’m hoping it’s just hormonal, because I also ate cheesy bread for dinner and was so incredibly happy about it.

I’m going to be real, real with you right now too, last week, at work, was hellacious.  It was probably one of the worst weeks I’ve had at work in a while, and spending my evenings and this weekend tearing through The Mortal Instruments series (Don’t hate! I have been reading YA lit like no one’s business,) was super therapeutic, and exactly what I needed.

More real real, I just got my T.C.R.G. exam pack in the mail today, and I am freeeeeaked out. The jig part of my Jig and Jog is like an Irish jig, and studying for the T.C.R.G. exam is almost as scary to me as preparing to run 26.2 miles.  I plan on getting more into the process and you know, explaining what the hell all this means in the near future, but it’s a pretty big deal for me, and it’s going to be a lot of work.  Also, yes, that is a scratch on my neck (Bits is in heat AGAIN,) and I really do look that tired and crazy today. Yay Monday!  But, in fairness, I am making a really weird face. I don’t always look like this….only you know….most of the time. ;) I promise I clean up well.

Productivity vs. The Hunger Games

Sometime the middle of last year, Travis “read” The Hunger Games series. I say “read,” because Travis doesn’t actually read, he does only books on tape.  Anyway, he read them, and loved them, but I was kind of indifferent to them.  Not that I was 100% not interested, but for the most part, post-apocalyptic literature isn’t my bag.  Then, my girlfriends started reading them, so I got in line for the book sharing and have now finished the first two books in the series. They have completely sucked me in.  Kate delivered the first two books on Thursday night and as of Saturday night I had finished them both.   I’ll be picking up the third book today, and will have to force myself to bed and not stay up late reading.  It will be difficult.  I basically lost the entire day Saturday to Catching Fire.

I found it interesting while reading to see some parallels between The Hunger Games and the Twilight saga.  I have a feeling there is a similar fan base, but also a divided fan base (as there tends to be with things that are similar but also different.)  One parallel I discovered, aside from the obvious love triangle featured in both series, is that both Katniss and Bella feel hugely responsible for the well being of the people they care about, and knowing that whichever person they choose, they will ultimately be leaving another hurt terribly. There is also insecurity in both characters, but this seems to be where the similarities end, and I have a strong feeling that Katniss Everdeen is what Stephenie Meyer wished Isabella Swan actually was.  Where Bella is so plain she is practically devoid of any personality, Katniss explodes with personality, with fervor, with a will to survive.  From the beginning we see both characters are willing to sacrifice everything to save the ones they love, but where Bella fumbles around and seems weak, Katniss is powerful in her resolve.  This is not to say I think Bella Swan is a terrible, irredeemable character, I just find her far less developed than Katniss.

They’ve just started casting for the movie versions of The Hunger Games, so that should be interesting to watch play out.  I keep hoping they have a larger budget than the Twilight films so they get a decent hair/makeup and costume department.

I wasn’t completely unproductive on Saturday actually.  Although the better part of the day and evening was spent reading, I managed to make my first green smoothie.

I followed the recipe Angela posted on Oh, She Glows  only I used chocolate soy milk instead of almond milk, in the hope that the chocolate would make it taste better.  I was pretty nervous it was going to taste like sludge.  I even bought some Chia Seeds for the first time ever at Whole Foods on Friday evening. Have you ever made green smoothies? I’m sure most of you have, I’m pretty tardy to the party ;) See! I ‘m even late using that joke. Totally no longer culturally relevant.  Oh well.

Surprisingly enough, it tasted pretty good!

Even Peanut tried to get in on the action.  It kept me full for several hours which was great. Then I totally ruined my healthy green smoothie by ordering pizza for dinner.  Oops?  I figured it would be ok since I’ve got a 6 mile run planned for this morning. Sometimes a girl just needs some pizza.  Plus it was so hot in the apartment, the mere idea of turning on the stove or oven to cook anything made me feel gross.

The Customer is Always…

I started writing this post yesterday when I got home from work, but then I got distracted and decided to go on a run outside, and when I got home I had to start making dinner because the girls were coming by for our weekly dinner.  So, my post sadly got pushed to the back burner.

Yesterday afternoon two co-workers and I decided to order lunch from the Baja Fresh down the street from the office.  As a whole, I’d say someone from our office eats there at least four times a week, so they see our staff pretty frequently.  Normally we call in our order and walk down to pick it up so we don’t have to wait for ages at the restaurant.  Yesterday, I offered to call the three orders in, and explained to the woman taking my order I had three separate orders that would be paid for separately.  There was apparently a misunderstanding because after I went through all three orders, she asked me for the other two orders, and then got very upset when I explained that when I said, “the next one is…” I meant the next order.  However, I wasn’t that bothered, I figured it would be an easy fix.

Apparently, I was wrong.  The woman I was speaking with got very upset, put me on hold, in which she simply put the phone down on the counter and went to get her manager.  I was on hold for over 4 minutes.  When her manager picked up the phone he asked if I needed to place an order.  I explained what had happened, and he said “well, you didn’t tell her it was three different orders.”  I calmly explained that I did tell her, but that I wasn’t upset, I just wanted to make sure we could pay for each order separately.  He then asked me, in an irritated tone of voice, “how do you intend to pay for this?”  When I let him know it would be two credit cards and cash for one order, he said “Well, that’s going to be a problem.”  I remained silent, I didn’t even know how to respond, and then he said “Well, your order is ready.” *click*  He hung up on me!

I walked down to pick up the food, and when I arrived, there was no one at the Phone Order pick up register. I patiently waited a few minutes, when the manager asked for my name, and then had a girl come over to man the register.  The girl asked for my name, when I gave it to her, she gave me a dirty look, then walked away from the counter.  She got her manager and the two of them discussed in Spanish how to handle my difficult payment situation.  I may not be fluent in Spanish but I know enough to follow most conversations.   The girl then returned and asked me in a surly voice how I intended to pay.  I let her know that I had cash for two items and a credit card for one. I was able to get cash from a co-worker to attempt to make it eaiser.  She rolled her eyes and gave me the total for one of the items.  I handed her the cash and she looked at me and said “I can’t give you the change until the end, when I open the register.”  I said that was fine, as long as I got the change I didn’t really care when she gave it to me.  When we got to my food, I gave her my frequent buyer card which was given it’s final stamp, she said really rudely “your next meal is free.”  She then handed me the bag of all three items, holding it from the bottom, and when I picked it up by the handles and attempted to walk it to the salsa bar, one of the handles broke.  She shouted after me “Thanks!” in a snotty voice. 

Needless to say, I am not in any big hurry to go back to that Baja Fresh.  I’ve never had such a terrible experience in customer service, especially when it seemed it wasn’t even that difficult for her to actually ring up the order with the three separate payments.  When I got back to the office I went online and filled out the survey following the link they placed on my receipt.  I normally just let things slide, but I was so annoyed by the whole experience that I made sure to complete the survey and use the comment box to explain what happened.

Popcorn & Just Around The Corner

I’ve been home sick all week with the stomach flu, what can I say about this week? Well, it sure has been fun, sleeping, reading and puking my guts out.  Sounds great, right?  I bet you’re all super jealous ;) I finally sucked it up, and went to see a Nurse Practitioner yesterday who for the low, low price of my $20 co-pay let me know my bug is viral and her “prescription” was for popsicles, bland foods, Tylenol and ginger ale. On my way home, I picked up Tylenol, popsicles and ginger ale. Then, I went home and crawled back into bed, snuggled with the kittehs while I ate a tiny Icee in a cup. The NP put me out of work for today as well, just to be safe, because I had a low grade fever when I got to Kaiser. I was however released to go back to work on Monday which is great. I think the worst part for me is that because I am hourly and my position is considered part-time I do not get sick time.  When I’m not at work, I just don’t get paid.  So, a week home is a big deal. Travis was annoyed, and wanted me to go in all week (he’s off in Phoenix for work,) but I definitely draw the line at going to work when I have a fever and can’t keep anything but water down.  Aside from not wanting to get worse, I certainly don’t want to share my disgusting germs with the whole office.  Especially since I share a relatively small office space with two other people.

But, I digress, I’ve spent this week reading The Girl With The Dragon Tattoo and The Girl Who Played With Fire (anxiously awaiting a chance to pick up The Girl Who Kicked the Hornet’s Nest,) and was absolutely hooked.  It was great that I was lucky enough to have new reading while I was in bed because otherwise I would have lost my mind.  I had a hard time spending any length of time on the computer, so laying in bed, reading was really the most comfortable I could get when I wasn’t sleeping.

While surfing the web today, I came across this article on Yahoo! about the history of movie popcorn.  Movie popcorn is probably one of my favorite foods, ever. I have a really hard time not getting popcorn at movies, and typically end up getting one in a size that is probably a disgusting amount of fat and calories.  Lately I haven’t been able to finish the larger sizes, and have slowly been downgrading.  I haven’t reached the children’s size yet…but I do still cover it with butter. I don’t even care that it’s not real.  I was a little surprised by this fact in the article, “Today, concession stand sales account for a whopping 40 percent of movie theatres’ net revenue.”

40 percent! That’s nearly half, crazy!  Do you enjoy popcorn at the movies?

Now for the just around the corner:  in the next week or so, there will be some changes happening here, and I’ll definitely keep you posted, but it’s a little bit of a surprise until I’m finally ready to unveil it all.

Mars Needs 6 Miles and Kitchen 24

Last night, I set my alarm for 5am.  I planned on joining my running buddies for part of their 14 miler, and was actually pretty excited about it.  It had been a while since I’d run outdoors, so I checked my alarm twice before going to bed, and crashed around 9:30pm.  I woke up at 5:50am, my alarm never went off.  I still can’t determine what it is I did wrong in setting this alarm as it is the same one I use during the week for work, but whatever.

I hauled ass to Griffith Park to meet Janna, and we set out.  I had to meet friends at the Arclight at 9:40ish for a MARS NEEDS MOMS screening, so I knew I’d only be able to cover about 6 miles, which was disappointing.  I had been hoping to get in closer to 10.  Janna and I started out, and did about a mile warm up walking, and then started running, but about 2.5 miles in Janna’s knee was really bothering her, so we just walked the rest of the loop.  One thing that was kind of exciting to discover: we took a different path than usual to try and stay on paved road as long as possible, and they’ve paved over a huge portion of what used to be dirt path.  This makes running so much easier because normally there’s so much dirt that it’s like running on really soft beach sand.  It makes both of us nervous that we’re going to twist an ankle.  So, it wasn’t what we had planned, but we at least got some mileage covered!  In my haste to get to the park, I skipped breakfast (I know,) and then didn’t end up leaving the park until about 8:30 which made me nervous timewise.  I realized I now didn’t have time to shower (which wasn’t as gross as it sounds since we walked the whole way basically.)  I rushed home, changed, grabbed a cereal bar and hit the road for the Arclight.

I have to say, that MARS NEEDS MOMS was terrible. It was disjointed, upsetting, and actually pretty racist and sexist in ways I was shocked by.  I am really kind of surprised this is a kids movie, and know that if I were a kid, and watched this movie, I would be really upset by it.  I actually said, out loud, during a particularly upsetting moment “THIS IS WORSE THAN BAMBI!!”  It’s in 3-D and doesn’t even really look cool, there wasn’t anything special about the movie that made it necessary to be in 3-D. So glad I didn’t pay to see this movie.  I wasn’t, however, disappointed by my small popcorn and Coke.  I only drank about a quarter of the soda, but man, that popcorn was good.

After the movie, we walked to Kitchen 24, where I bravely resisted the lure of the amazing Disco Fries.  Disco Fries are seasoned fries, with cheese, and gravy.  They are incredible, and probably even life changing. However, I figured, since I’d just stuffed my face full of popcorn, that I should probably go with something healthier.

I ordered the Tree Hugger which is their homemade granola (delicious!) with yogurt and strawberries.  It was perfect, refreshing and just enough food.  I am totally in love with their homemade granola. I wish I’d thought to ask if they sold it.

When I got home, Travis and I finished up our menu and grocery planning for the week and headed out to the stores.  We usually do Trader Joe’s and then Ralph’s.  Let me tell you, today must be asshole day because everyone out and about at the grocery stores was a total jerk.  People taking up whole sections of food areas while leaning on their baskets and talking on their phones.  People letting their children run amok around the stores screaming and pulling things off of shelves, people who decided to leave their carts completely blocking aisle ways and walk away.  It was exhausting.

Right now, I have four things planned for the next hour and half: kitteh bath time, brief clean up of the office, nap, shower.  This evening we’re heading out to meet friends at Father’s Office in Santa Monica for a bit of some goodbye Mikela and Happy Birthday to another friend.  Travis and I will be picking up some cupcakes at Frosted Cupcakery, which I am really excited about.  I’ve never had their cupcakes before, but I’ve heard good things.

Full weekend, but definitely worth it. Did you have a full weekend?
