The Chili Mac Compromise

Normally, we plan our dinners for the week, then go grocery shopping.  This week things didn’t go quite as planned so we’ve been picking up the food for dinner each night. This is not ideal, and it’s not how I like to manage our grocery budget, but it happens sometimes.

So, last night, after I got home from work and an attempted run (major fail in the run department. I only made it 1.10 miles before major foot pain and stomach issues sidelined me,) we hit up the grocery store in an effort to piece together a meal.  Travis really wanted to make Chili Mac.  I was strongly against this, as I am not a fan of canned chili in general, and wanted something more healthy.  However, after what felt like hours of being worn down I agreed to a compromise.  We could make said Chili Mac, but we had to use whole wheat pasta, and real cheese.

Sadly, this still did not make this meal appetizing to me in the least.  I was only able to stomach about three bites before I felt sick. We will be doing a real deal grocery shopping this weekend, but man, oh man, I am not a fan of the Chili Mac.  Travis lined his bowl with Fritos first to make it the ultimate Chili Mac.

I’ll be the first to admit that I have some gross guilty food pleasures.  I like the Kraft blue box mac and cheese, I sometimes enjoy a Chef Boyardee Spaghetti and Meatballs meal in a can, but I just can’t do the Hormel chili.  Sorry, I’m not sorry. What are your guilty pleasure foods?

The upside was that when we left the grocery store, and were able to use a coupon code for a free movie from Red Box.  We rented Inception, which is something I’d wanted to see in theaters, but never got around to.  I really enjoyed the film, but it was definitely a “thinking,” movie.  I was pretty impressed with the whole story though, and it looked awesome, effects wise.

Thankfully, tonight’s dinner was at least healthier.  We headed to Whole Foods to pick up some salmon, veggies and wild rice.

Sadly, we overcooked the salmon, but it was much improved from last night’s dinner for sure.  I also picked up this deliciousness

Way yummy.  I’m looking forward to a restful weekend, with an 8 miler on Sunday.   My foot is feeling a lot better, so I guess Sunday will be the big test.  I’ve stayed off it since Thursday when I attempted a run and had to stop 1.10 miles in.  I’m off to eat some more delicious chocolate and then early to bed. I’m exhausted today, it felt like this week lasted forever!

Lost Taste

Lately, nothing has really tasted super great. In fact, almost everything I’ve eaten this week has tasted blah.  Has that ever happened to you? On Thursday night I suddenly really wanted some Chicken Tikka Masala from our favorite Indian food place, Electric Karma.  After going back and forth we realized neither one of us really felt like cooking, or cleaning the kitchen to cook, so we went ahead and ordered Indian food.

I was excited. It had been a while since I’d even had an urge to eat Indian food, so I was really looking forward to my Tikka Masala and Nan.

Sadly, when I took my first bite, I was disappointed.  I don’t know what it is, but the past week or so, everything I’ve eaten has just tasted kind of blah.  The Tikka Masala was also a little more spicy than it usually is, which also disappointed me.  I am, despite my sassy personality, not a spicy food person.  So, I kind of pushed my food around my plate for a while and then ate an It’s It ice cream sandwich.

Last night’s dinner was a bit more of the same.  We made Chicken Croquettes (using this recipe, with some Travis alterations,) with the leftover rotisserie chicken I picked up on Wednesday.  It was good, but I felt kind of blah about it, and we had no side because the green beans we were going to eat with it, were all smushy.  So, last night’s dinner was a bit of a let down.

So, tonight, Travis is making steaks, and we’ll roast potatoes and broccoli.  I’m hopeful that this will taste good :)   Maybe I need to do more food overhaul, but I usually enjoy eating, so I’ll be happy when this passes.

I just saw The Town tonight (see what I did there with the subject line? eh? good, right? No, I know, it’s terrible,) and it was really good.  I wasn’t sure I’d like it, because, well, I’m not so much into movies with a lot of violence and car chases and whatnot, but….wow! Way to go Ben Affleck.  Also, I have to give props to Miss Boobs Legsly (hey hey fug nation!) because she was great. As someone who has worked as a make-up artist, I can wholeheartedly say that the make-up in this film was excellent.  FX make-up can sometimes be terrible and become distracting.  One of the things I will never forget is being in class at Make Up Designory having our teachers constantly remind us that, if people are noticing the make up, it’s probably not a good thing.  I will say, that on occasion, the music felt out of place, but overall, a great film.  I was impressed.

Before the movie my friend and I did some shopping at the Americana and The Glendale Galleria, and we decided to get pretzels to tide us over before the movie.  I got a regular pretzel, no salt, with cheese sauce and a small cherry coke.

I definitely shouldn’t have gotten that popcorn, or the second soda (I hadn’t had a soda in a really long time before today,) at them movies.  My stomach is not pleased with me, and I should be in bed because I’ve got to be up at 6am for our first long run tomorrow.  We’re doing 7 miles in the morning.  We’re starting early because apparently, Los Angeles didn’t get the memo that it is now fall, and it’s going to be an amazingly hot weekend. Yay!

Shaky Arms

Today is my first day of Phoenix half-marathon training.  Mondays are strength training/stretch days, so after work, I took a Boot Camp class offered at the gym.  I started the day off with some oatmeal.

Around 11, I was hungry again so I dug into my overly stuffed lunch box and pulled out some Trader Joe’s Honey Pass the Trail Mix

It’s got honey roasted peanuts, pretzels, sesame sticks and some other stuff that was a little bit spicy, but not too spicy.  Lunch was leftover Hamburger Helper and a salad, and a small granny smith apple.  Later in the afternoon, I grabbed another snack, some freeze dried fruit a la Funky Monkey.  We got several boxes sent to work last week so I took a case of pineapple and the applemon flavors.

It’s pretty good, it’s all real fruit, fat free, no added sugar. Kind of exciting, right? They’re super sweet, but it’s nice to know there’s nothing added.

After work, I headed up to the gym where I took my first Boot Camp class in months.  It was a little hard, especially when our relay races took a turn for the hop + Burpee.  I think I died a little bit inside. My arms are all kinds of shaky now, and it’s been almost two hours since the class ended.

I didn’t get home until almost 8pm and then I had to move Travis’ car so he doesn’t get a ticket tomorrow morning.  So, dinner, was nachos.

Trader Joe’s soy and flax tortilla chips, 2% Mexican blend cheese, tomatoes, avocado, black beans and sour cream.  Not as satisfying as I was hoping they would be, but hey, it’s still food, right?

Tomorrow’s training is an easy 3 mile run.  Luckily I should be home a little earlier than tonight :)

Meal Planning: The Great Money Saver

When Travis and I first started dating, we ate out pretty frequently.  A lot of this had to do with the fact that my job at the time kept me late. A lot more of this had to do with the fact that we were both pretty lazy about cooking.  Then, I started a job at the front desk of a gym, and Travis started cooking a bit, and would bring my dinner when I worked the closing shifts (6pm-10pm).

Travis is a really great cook, I know I’ve said it before, but it’s true.  He’s great at pulling meals together and after dating for nearly four years I’ve picked up a few tricks ;)

One thing Travis and I started doing a few years ago that has significantly saved us money has been meal planning.  Four years ago, before we were dating I went to a Pampered Chef wedding shower for a cousin, and another of my cousins talked about how now that she has kids, she plans all her meals and freezes soups and sauces.  At the time I thought “Oh my God. How boring!”  Yet, now, I can honestly say, she was so smart!

Every other week, we sit down and plan out two weeks worth of dinners.  We do this by choosing from foods we already have in the fridge, freezer or pantry, and also add in some of our favorite meals.  Sometimes it gets a little challenging, and we definitely get stuck every so often.  Once our meals are planned, we make a grocery list and include only what we need for each meal.  We then add if there are any additional items we need (i.e. toilet paper, toothpaste, deodorant etc.) we throw those on there as well.

We don’t coupon as effectively or efficiently as we could, and it’s something we’re working on slowly, but surely.  We also tend to break up our shopping to Trader Joe’s and Ralph’s so that we can purchase items at the best cost possible.  Trader Joe’s tends to have better deals on most of our non-brand name items, and produce, as well as the Trader Joe’s brand items we love so much, and then Ralph’s is great for those items.

Today, I looked through the fridge, freezer and pantry and created a week of meals.  I was able to stop only at Ralph’s for everything I needed (plus a few extras. Oops) for only $43.  If I hadn’t purchased the extra items I probably only would have spent $30 for a whole week of meals.  They aren’t quite as balanced or healthy as I would really like, but I’m trying to eat down the supplies this week.  Payday is on Friday so I can get a little more creative next week =D  However, even if I’d gotten paid earlier, I think it’s important to eat what you have and not waste food.  I want to get better about that, because I realized we throw out a lot of food :(   It’s shameful because so many people in this country go hungry every day.

My goal for September, is to not let any food go to waste.

Other ways to save money in the kitchen:

Make large meals and take leftovers for lunches during the week, or freeze them for later!

Frozen veggies are great, healthy and inexpensive.  You don’t need to buy the fancy brand name veggies in any sauces.  The grocery store brands are just as good!

Speaking of brand names, most items can be replaced with generic or store brand items.  My rule of thumb is to try the store brand and see if I notice a difference in taste.  For the most part, we buy a lot of store brands, condiments, paper towels, shredded cheeses, pastas (although Trader Joe’s pasta is only 99 cents for a pound fyi).  There have been some items we’ve nixed, trash bags (the store brands tend to rip easily and make a big mess), freezer bags (but not sandwich bags).

Join grocery store clubs, we get coupons in the mail from Ralph’s every month, and earn points with each purchase which go toward more coupons.  Plus, because the card records data from our shopping trips, we tend to get coupons for a lot of items we frequently use.

When we first stopped eating out so often it was a little hard socially.  We really wanted to save money, so we cut back a lot.  To keep from feeling totally isolated, we have friends over once a week for dinner, and everyone brings something for the meal.  This allows us to see our friends without having spend an arm and a leg.  Don’t get me wrong, we still go out to eat every so often, but we’ve been able to save money and eat more healthfully doing this, and it’s been great for us. :)

Spread Happiness

One of my favorite blogs is Caitlin’s Healthy Tipping Point. I enjoy her blog for a lot of reasons, but especially because of her ongoing message of joy and self love.  Next week, Cailtin’s first book, Operation Beautiful launches.  Operation Beautiful is an amazing way for each and every person to get involved in changing the lives of others.  Just by leaving a kind, positive note in a public place, you could be brightening the day, and life of another woman or girl.  I may be newer to Caitlin’s blog, but I couldn’t help but get excited when I saw not only a giveaway on Shape.com  but also a blog post all about Caitlin and her new book written by Jenna Autuori.  I just wanted to share with all of you so in case you hadn’t already discovered Caitlin, you could do so now!

I am a big fan of positive and supportive people, especially in the blog world.  Something I’ve learned from years of competitive dance is that  even when your goal is 1st place, it’s always more important to have fun and make friends. :) I’m not sure that blogging is so much about “1st place” but I do know that the internet in general is a whole lot more fun when you can share yourself and your friends with others.

On to lunch:

Leftover Chicken and Veggie Stir-Fry with brown rice.  I swear this was way more appetizing than it looks.  I think I ate too much though because I’m now feeling sleepy.

Oatmeal for Breakfast

This morning, I decided to make one of my Trader Joe’s Steel Cut oatmeals from the freezer.  It always seems to keep me full longer than just cold cereal.  So, this morning, it was oatmeal, chocolate chips, almond slivers and a small banana.

Tasty, a little crunchy and definitely kept me feeling full longer than yesterday’s cold cereal and banana.  I wasn’t hungry for my morning snack of string cheese until around 11:30am

I’ve got some leftover Chicken Stir-Fry from dinner last night and I brought a frozen Trader Joe’s brown rice to add to that, but here’s a picture of what dinner looked like last night.

Travis claims he didn’t follow any recipe but I’m pretty sure he marinated the chicken in some soy sauce and corn starch. Cooked the chicken in the skillet with some peanut oil. Then sautéed the veggies (we used bean sprouts, snow peas, broccoli,  and carrots) in some peanut oil, adding in some oyster sauce and teriyaki sauce toward the end.   We also steamed the last of our white rice in our rice cooker and topped the veggie and chicken mixture with some sesame seeds.  It was really tasty, great flavors without being overpowering.  Not too salty, or too much sauce.  I’m excited to have the leftovers today!

Tonight is TND, and we’re making our “Super Quick and Easy Lasagna.”  It’s probably technically “cheating,” since we use no boil noodles and jarred sauce to make it, but it’s delicious, and easy, and inexpensive.

After my run last night, my knees are quite sore today.  I don’t think I stretched enough.  I’ll be rushing home tonight to squeeze in a yoga video via our OnDemand.  I’ve been looking around the internet for info on beginner yoga to help me get started since I’m not attending actual classes (which is hard for me. I really like the real time form corrections that come with being in a class.)

I’ve Created a Monster

After my very first Pinkberry experience on Saturday, followed by my second Pinkberry experience on Sunday, I am now sitting at my desk craving Pinkberry! What have I done?!  Luckily the nearest Pinkberry to my office is a little over a mile, which is just a bit too far to skip out to for right now.   I guess I’ll just have to be satisfied with the lunch I brought from home, and the knowledge that some day soon, I will be able to enjoy Pinkberry again, because there is one in the Farmer’s Market at The Grove which is very close to home ;)

Lunch today was a wrap I made last night.  I smeared some Trader Joe’s hummus, a Laughing Cow lite Swiss wedge onto a tortilla, added some turkey, spinach and two slices of tomato.  I put too much in the small tortilla so it wasn’t the prettiest wrap, but it was tasty!

I was worried that the tomatoes would make everything super soggy this morning but they were fine. The only set back is that this was not really enough food as I am hungry again and now debating between the Cherry Pie Larabar, the chocolate Teddy Grahams and the Strawberry Fage yogurt I brought.

As news spreads that Friday is my last day in the office, so many people have been checking in with me, and wishing me luck in my new pursuit.  It’s very kind of them, and I appreciate it. This is the hard part, because I will miss my co-workers!

Carbo-licious

It’s Friday, which means it’s Bagel Friday, my second to last Bagel Friday (whatever will I do?!)

Cheesy carby goodness. Yummmm.

Mmmmm cream cheese!  I know a lot of people are super into nut butters on their bagels, but I don’t know that I could do it. I love cream cheese in a way that is probably totally inappropriate.  Because the bagel  was so carby and good, I wasn’t hungry for lunch until about 1:30.  However, because I simply grabbed leftovers from dinner last night and didn’t make any upgrade plans, lunch was another carb fest.

Leftover Four Cheese pasta from Bossa Nova.  The pasta and sauce kept its flavor which was nice, but since it was a cheesy sauce it became kind of gross and greasy when re-heated.  I am definitely looking forward to some greens and protein for dinner tonight.  It’s a good thing I took some chicken out of the freezer to thaw.  I’m in a bit of a food coma right now.

This week has seemed to just fly by for me.  I can’t believe it’s already Friday! I’m meeting my training buddies for an extra early 7am run tomorrow. Thankfully this week we’re only doing 6 miles though. Last week’s 10 miles was a real challenge.  I ended up logging a total of 20 miles last week, definitely the most miles I’ve ever logged.  This week however, has been depressingly void of miles.  I’m going to attempt a run tonight.  It just felt like the running gods were against me this week.  I was exhausted and my hip was still a little sore on Monday, Tuesday we had TND, Wednesday we finally did our laundry (which is a whole ordeal), last night I was stuck at work until just before 6:30 which got me home too late to fit in a run.  I’ll have to see how today shakes out, hopefully I can get out and home by 6ish so I can log some miles before tomorrow’s 6 mile run.  I’ve been feeling kind of blah all week, so maybe the rest is needed, but I don’t want to fall behind in my training.

My race is only about 6 weeks away! How did that happen?? Eeep!

Question: How far in advance of your races do you tend to get nervous, or do you even get nervous at all?

For brunch I made an omelette. Originally, I was planning on making just scrambled eggs with goat cheese, spinach, tomato and some turkey. I was actually kind of excited about it. Then, I discovered that the goat cheese was not good, the spinach was also, not good, and the turkey had a little bit of a weird texture (it was squishy, ew). So, compromise, I used mozzarella and tomato. Sadly, it didn’t turn out as well as I’d hoped, and I ended up eating only like a quarter of it.

I love pizza, I always have. My favorite is definitely plain old cheese pizza. Just cheese (sometimes extra cheese) please! I don’t need anything on

When Travis got home from the World Cup game, we took a nap, and ended up wasting the whole day, which normally would disappoint me. But, since I’m not feeling so great, it’s merely an inconvenience. We need to go grocery shopping this weekend.

My vote for dinner tonight, was pizza. I love pizza. My favorite is just plain old, cheese pizza. So, we ordered a pizza from North End, half cheese, half prosciutto for Travis. It was tasty, but my plain slices totally had some prosciutto on them and it was VERY salty. Ick.

The kittehs were very interested in the pizza.

Now, Travis and I are watching the last two episodes of Season 3 True Blood (Travis needs to catch up) so we’ll be ready for tomorrow’s new episode. :)
