Irony

After my disappointment at healthier choices at Pomodoro, we made pasta with shrimp, prosciutto and a creamy sauce.  The irony is not lost on me.  However, in our defense, this was a “work with what you’ve got” meal.   We already had the shrimp (freezer), Parmesan, heavy cream, shallot, garlic, and prosciutto, so all we needed to pick up yesterday at the store was the pasta.

Also with dinner was a glass of this wine, which was leftover from New Year’s Eve.

Because, sometimes, on a Monday, you just need some $2 wine.  Today seemed to simultaneously fly and drag.  Must be the first Monday after a holiday weekend.  Today was a rest day, so I left my workout gear at home, and also managed to leave the apartment without breakfast.  Oops.  Tomorrow, breakfast for sure.

Energy Suck, TGIF

This week just drained the energy out of me in a big way.  Mostly on an emotional level, it was a stressful week.  So, I am super glad it’s Friday night.

Dinner for Travis’ 30th was at one of our favorite local restaurants, Terroni.

Bottle of the house red.  Was really good (but a little more pricey than expected for a house wine)

Appetizer! So delicious. Maybe my favorite thing at this place.

My homemade pasta with a lamb ragu.  It was really, really good. Just enough pasta to make me feel full but not stuffed or uncomfortable.

My dessert: Lemon sorbet, was really tasty and refreshing.

Travis’ dessert: molten chocolate cake. SO GOOD.

After work today, I ran an “easy” 2 miler.  I was supposed to run it at 12:47 pace, but on the treadmill I couldn’t find that so I ran it most of the way at 12:30, then at the end bumped it up.  It was much easier to do than Monday’s 2 miler.  We’ve got our long 7 miler planned for Sunday.  I’m actually looking forward to it which is weird ;)

Tonight, we had hot dogs on the menu, but let’s be real.  That doesn’t sound good almost ever. So, we ended up going for sushi at a new place that has a great all you can eat deal.  I took pictures with my phone, but t-mobile’s website is being lame and won’t pull the images for me.  Basically, it was really good and a nice little date night for us.

I have been so tired all this week, and have had a headache most of the week (can’t wait to have insurance again end of next week) so the idea of getting to sleep in tomorrow sounds So good.

I’m looking forward to taking this weekend to clean up the apartment and get things organized and settled again.  The place has been a mess and I think the mess has been another factor in my week long stress.  Does a messy home stress you out?

Oatmeal, Protomen and Easy Pasta

Yesterday was a rest day as far as training goes, since we are now T-Minus 4 days away from my first half marathon! I had planned on coming home, relaxing in front of the TV for a bit, then writing a nice blog about my rest day and our dinner, and include yesterday morning’s oatmeal.  However, that did not happen.  Travis’ friend from back home (Nashville) is in a band called The Protomen.  They are awesome, seriously, so cool, look them up! They are currently on tour and played a show Monday and Tuesday night not far from us, so Travis went to both shows.  Last night, his friend happened to be a few blocks away from us (they were all at The Price is Right taping) so he came over to hang out and have dinner with us.  This is why I don’t have any pictures from dinner.  We were all so hungry, we simply wolfed it down with hardly any pause.

I can however, share with you the recipe we used! We made the Easy Pasta Bake, which I found in this month’s issue of Shape Magazine, but can also be found online here! We used brown rice pasta from Trader Joe’s instead of whole wheat, because it was all we had in the house.   It was good, but I’d make some slight changes, the addition of goat cheese would be awesome, as would pine nuts.  Also, I would maybe add some onion as it was a teensy bit bland.  I would definitely use mozzarella instead of the cheddar cheese next time.  The cheddar got a little bit greasy. :(

Ok, well I’m dilly dallying and just realized it’s almost 8am! I need to get a move on or I will be late for work. I’m going to have to buy lunch today since we don’t have any leftovers from dinner.  Oh well!
